About Me

I’m Josie Eoff, FNP-C, a family nurse practitioner with the Phelps Health Gastroenterology Department. I work in collaboration with Phelps Health Internal Medicine Physician Pecos Coble, DO.

I choose to practice at Phelps Health because Rolla is where I was born and raised, where I’ve raised my family and continue to live. Since 1995, I have been with the healthcare organization, working as an RN (registered nurse) for several years with GI (gastrointestinal) experience. In 2018, after furthering my education, I began practicing as a family nurse practitioner, wanting to advance in the GI field.

I see adult patients (ages 18 and up) for cirrhosis (late-stage scarring) of the liver, fatty liver, viral hepatitis, inflammatory bowel disease, colon polyps, hemorrhoids, Barrett's esophagus, peptic ulcer disease, diverticulosis, irritable bowel syndrome (IBS), chronic idiopathic constipation (where the cause is unknown), chronic diarrhea, abdominal pain, GI bleeding and other GI issues.

Growing up, I enjoyed anatomy and science in high school and searched out a career that would be diverse and self-sustaining. As a GI provider, I strive to care for my patients to the best of my ability. I value a respectful and mutual collaboration with my patients, which requires attention to detail, careful observation and active listening to ensure I’m gathering accurate information.

I am married with three adult children and three grandchildren. We share our home with one dog, two cats and several fish. With my grandchildren living in Alaska, I love to travel and spend as much time with them as I can.

Outside of work, I have several creative outlets, including reselling vintage and antique items. I also make my own jewelry, upcycling “junk” to be useful and beautiful, with a pile of projects always in the works. I have a small greenhouse and love growing flowers from seeds that I harvest. And, to keep things interesting, I also follow true crime daily.

I also offer telehealth visits, which allow patients to visit with me remotely using a smartphone, tablet or computer with an internet connection and audio-video capabilities.
